Our quest for quality

Eyrewoolf Abalone carefully catches a selection of the best greenlip, blacklip and roei abalone from the Eyre Peninsula. We sell them in snap frozen and precooked formats especially designed to lock-in their taste and texture as if direct out of the ocean.

Our sashimi bursts with salty oceanic flavour, sweet fresh oyster, umami and nutty notes with a lingering buttery finish.

Searing and braising brings out a soft springy texture, sweet and smoky attributes like fried scallop and pork, and a peanut and buttery finish.

Our steamed or sous vide product is tender and springy to chew, tasting of sweet fresh oyster, umami and green seaweed.

Discover the influence of provenance, season and species on our abalone flavour and texture. Experience how preparation can influence the ideal wine pairing.

Steamed and sous vide abalone pairs beautifully with a dry South Australian Riesling or Methode Champenoise sparkling wine. Citrus and acidic wine attributes boost the release of sweet abalone flavour while cleansing the palate. Yeasty attributes in the sparkling wine highlight the abalone’s toasty and nutty flavours.

Our seared abalone’s caramelised smoky pork and nutty notes pair elegantly with the vibrant fruit and spicy attributes of South Australian Grenache or Shiraz.

We take the safety of our products very seriously.

Eyrewoolf Abalone are fully certified by the Australian Wild Abalone (AWA) Quality Assurance Code of Practice. We operate in line with Australian Government Guidelines for the Ecological Sustainable Management of Fisheries – 2nd Edition, our South Australian industry is certified for export under the Commonwealth Environment Protection and Biodiversity Conservation Act 1999 (EPBC act).

Our products are processed with strict safety standards, with no added hormones or antibiotics.

We shuck and chill our abalone immediately after it is caught. Once on shore, we use a specialized blast freezer to rapidly freeze our IQF (individual quick frozen) product to a core temperature of -28 ᵒC generating a storable product. Our process is optimised to maintain flavour and texture equivalent to the live abalone.

  2. Docosahexaenoic acid (DHA), an Omega 3 fatty acid, associated with reducing heart disease and cancer risk;
